Think about it, conventional flowers are probably one of the most heavily fertilized and heavily sprayed with pesticides than any other commercially grown product. Well obviously to keep the pesky critters from chewing on them and to make them grow big and beautiful, but they can do this BECAUSE they are not meant for human consumption.

Did you know that conventional flowers are sprayed daily with a cocktail of hazardous chemical fertilizers and pesticides which require the person to have a special license and be wearing a hazmat suit?

Do you want something that has those chemicals all over them touching something you will be eating? And what about the buckets of bacteria laden water those beautiful flowers sit in before purchase? You get to the venue and the florist hands you a bucket full of various flowers to use on the cake. Now what do you do?? The first step is going to be determining what flowers are actually safe to put on the cake in the first place.

When I first started decorating cakes with fresh flowers it was difficult, on the spot, to figure out which of the gorgeous flowers I was just given were actually safe to use.

There are websites that list toxic and edible flowers but you have to actually know the names of each flower to be able to look them up. That is what prompted me to create this full color visual guide to help identify most popular wedding flowers and determine if they are safe to use. It is a reference specifically for cake decorators.

This guide categorizes the flowers in 3 groups Ч safe, mildly-toxic and poisonous. My tutorial can be downloaded to your phone so you have it on hand anywhere you go to help you how to write a vendor rejection letter choose your floral decorations. It also has a step by step tutorial of this cleaning and preparing process as well as a list of tools for a handy take-along tool kit. It is extremely helpful if you are going to be decorating with fresh flowers.

Here is an overview of the basics tools and materials you will need to clean and prepare the flowers:. I have some links at the bottom of this post to some of the tools I have purchased for my kit. I always give them a little shake to dislodge any pollen, petals or leaves that might be loose. Let sit for one minute then wipe the stem dry. This kills any bacteria that can be living on the stems. This locks in any moisture that may leak out of the stems. Trim the straw to just slightly longer than the stem bundle.

Now this is where one of my awesome epiphanies comes in. But this creates a few problems. Also it makes it difficult to insert the flowers into the cake through the waxed paper. So I was brainstorming one day about this problem when I had the thought that it sure would be better to just have something coating the backs of the flowers instead. Edible Spray Glaze, of course! The ONLY time flowers should be consumed is if they have been grown at a certified organic facility specifically for being edible flowers.

Commercial flowers are not grown in a food safe manner no matter how you clean and prepare them. Now you can feel confident that the flowers you are decorating your cakes with are as safe as they can be.

In the past I have used straws or water picks and those work pretty good too but sometimes my stems are too thick for the straws. Making your fresh flowers food safe is pretty simple although it can be time consuming depending on how many flowers you need to put on the cake.

I would typically allow myself an extra hour at set-up to place flowers. Wrap the floral tape around the plastic wrap to secure it to the flower. You can also use a product called Safety Seal which is food safe wax that when melted, you can dip the stems of flowers into the wax to seal them.

This is great if you have access to a microwave when you need to put the flowers into the cake. I have also used chocolate as a seal on the back of some gerbera daisies that I used to decorate my cream tart cake. Toxicity levels will vary based on the level of contact with the flowers.

There are also quite a few flowers that are completely safe and can even be eaten. Is it okay for the leaves to touch the cake? You only talk about safety for the stems. Would you wait until having the cake in the venue to do it? Or would you have them prepped before and just insert them on the cake upon delivery? If the flowers are in water spikes then you can do it the day before but if not then you have to do it during set up to avoid wilting. A friend wants white roses but is getting married outdoors in June and I am very concerned they will turn brown quickly. Are there varieties of white flowers known to be hardier, or any product you can use to prevent petal browning in these conditions other than what was mentioned above? Roses last a very long time. When I did my rose wedding cake tutorial I left them on the cake for two days and they were still fresh.

Is this still the correct way to do fresh flowers? I have my first order requesting fresh flowers! You can still wrap the flowers in floral tape but insert them into a straw so they are not touching the cake.
