Do you want something that has those chemicals all over them touching something you will be eating? And what about the buckets of bacteria laden water those beautiful flowers sit in before purchase? That is what prompted me to create this full color visual guide to help identify most popular wedding flowers and determine if they are safe to use. It is a reference specifically for cake decorators.
This guide categorizes the flowers in 3 groups Ч safe, mildly-toxic and poisonous. The ONLY time flowers should be consumed is if they have been grown at a certified organic facility specifically for being edible flowers.
Commercial flowers are not grown in a food safe manner no matter how you clean and prepare them. Now you can feel confident that the flowers you are decorating your cakes with are as safe as they can be.

I would typically allow myself an extra hour at set-up to place flowers. Wrap the floral tape around the plastic wrap to secure it to the flower. You can also use a product called Safety Seal which is food safe wax that when melted, you can dip the stems of flowers into the wax to seal them.
This is great if you have access to a microwave when you need to put the flowers into the cake. I have also used chocolate as a seal on the back of some gerbera daisies that I used to decorate my cream tart cake. Toxicity levels will vary based on the level of contact with the flowers.
There are also quite a few flowers that are completely safe and can even be eaten. Is it okay for the leaves to touch the cake? You only talk about safety for the stems. If the flowers are in water spikes then you can do it the day before but if not then you have to do it during set up to avoid wilting. A friend wants white roses but is getting married outdoors in June and I am very concerned they will turn brown quickly. Are there varieties of white flowers known to be hardier, or any product you can use to prevent petal browning in these conditions other than what was mentioned above? Roses last a very long time. When I did my rose wedding cake tutorial I left them on the cake for two days and they were still fresh.
